Tough to do these days unless you are sitting on parts already. I really like off lease mini machines for this, I'm partial to the Lenovo but I doubt there is much real difference. The NVMe to stick in it alone will cost you $100 though.

Real food casseroles are actually a pain in the ass, cutting all the vegetables and stuff. The advantage is crock pot time shifting the cooking burden.
